2016 Cabernet Sauvignon ~ Fountaingrove District

Fountaingrove Cabernet Sauvignon

Vineyard and Winemaking

This inaugural wine is a blend of our estate Cabernet Sauvignon with more exceptional fruit from a nearby vineyard within the Fountaingrove AVA. All grapes were hand harvested in October 2016. Fermented in small, open top bins the wine was punched down by hand. Thirty percent of the wine was aged in new French oak barrels, with the balance was in neutral barrels to retain the natural vibrant fruit characteristic. After three years of aging in barrel, the wine was bottled unfined and unfiltered. Bottled 110 cases.

Tasting Notes

The nose opens with rich, heady perfumed noted of cassis, candied plum, fresh ripe blackberry, spiced black licorice, with hints of molasses, caramel, cedar spice, and vanilla. The palate unfolds with chocolate cordial, candied cherrry, cassis, plum, with hints of spiced fruit cake and mocha. Tasting beautiful now, the wine will age gracefully over the next eight to twelve years.
