2014 Cabernet Sauvignon

2014 was a banner year for Sonoma County Cabernet Sauvignon, allowing us to produce a 100% Hans Fahden Estate Cabernet Sauvignon, which is only produced in the absolute best years. A near perfect year from beginning to end gave us the opportunity to hand harvest on October 20. The Cabernet Sauvignon grapes were destemmed directly to open top tanks upon arrival at the winery, where a long fermentation ensued. The grapes were gently punched down by hand twice daily, allowing for gentle extraction of flavors and aromas. After the fermentation concluded, we pressed the wine directly to 65% new French Oak barrels. After two and half years, the wine was moved out of barrels, blended, and bottled.

Tasting Notes

Opens with very perfumed, rich aromas of cassis, blackcurrant, violets and candied anise, with hints of vanilla cream soda, blueberry, cocoa powder and oak spice. The palate follows with broodingly dark chocolate, cassis, maple syrup, pipe tobacco and oak spice. With great depth and balance, our Estate Cabernet tastes great if opened now and will age beautifully for 10 to 20 years.
